This is what lunch has looked like for me over the past few weeks. I’ve mostly been up in London working hard.
Leon is a favourite lunchtime pit stop for me. I generally go for the superfood salad or the moroccan meatball box with slaw if I’m not having dinner as it is really filling. Not any more! I have discovered their amazing kale and peanut salad and I’m addicted. So much so that I’ve tried to create it at home. I don’t have a recipe for it, so here’s my take on it!
Kale and peanut salad
Probably serves 4 but about 2 portions for me!
For the salad:
300g curly kale, stalks removed and finely chopped
100g white cabbage, finely sliced
1 large spring onion, finely chopped
1 tbsp fresh mint, finely chopped
1 tbsp fresh coriander, finely chopped
2 tbsp roasted peanuts, chopped
For the dressing:
1 tsp olive oil (not extra virgin)
1 tsp sesame oil
1/2 tsp rice wine vinegar
1/2 tsp lemon juice
1 tsp honey
1/2 tsp Dijon mustard (Maille for me)
1/4 tsp garlic puree
Place the chopped kale, cabbage, spring onions and herbs into a bowl and mix well.
In a separate bowl, add all the dressing ingredients and whisk until well combined. Pour the dressing over the kale and stir well.
Serve topped with chopped peanuts, and enjoy immediately, as it doesn’t keep well once dressed.
